I’m LOVING all things coco-nutty right now and am excited to share this little slice of Colombian heaven with you.
Right from your first sip, this ‘Limonada De Coco’ will have you transported to Colombia’s tropical Caribbean coast, maybe Santa Marta, possibly Cartagena—either way, this easy vegan recipe is going to take you there, if only in spirit!
Side note. Vegan coconut lemonade tastes even better after you’ve hiked through the jungle for a couple of days getting all hot, sweaty, and having adventures you never imagined were possible. Just saying.
Back to the recipe, it’s simple. You just need 4 ingredients, a blender and 5 minutes to whizz it all up.
The coconut cream adds healthy fats and gives it that tropical vibe, lime juice adds the zingy (that’s now a word in our culinary vocab) zesty flavours which are balanced out by the subtle sweetness from the agave nectar. Best vegan summer BBQ drink ever.

VEGAN COCONUT LEMONADE
Creamy, infused with lime and subtly sweet—just 4 ingredients. Perfect for long summer evenings and Saturday afternoon BBQ’s (and maybe January the 27th when there’s still a hella’ lot of winter to go and you need mentally transporting to a warm tropical destination).
Prep Time: 5 minutes Total Time: 5 minutes
Servings: 2 Category: Snack, BBQ, party food & drinks
Type: Vegan, gluten-free
- 1 can full-fat coconut milk
- Juice of 5 limes (approx 1/3 of cup, use less if you don’t like it too limey)
- 2 cups ice
- 3-5 tablespoons agave nectar or alternative sweetener of your choice
LET’S MAKE IT
- Throw everything in a blender and blend (or use the pulse option) the ice has broken down, the consistency should resemble an old school slush puppy!
- Transfer directly to a nice looking glass and enjoy ♥
Limonada de coco traditionally has heaps of white sugar involved which we all know is no-bueno for our health so feel free to experiment with this recipe and use whatever sweetener you’ve got in your kitchen. I wanted to make sure the end result was bright white which is how it’s served in Colombia and found the agave nectar didn’t change the colour. Do let us know how it turns out if you use a different sweetener.
